Spinach & Veggie Muffins

Ingredients:
4 eggs
¾ cup egg whites
¼ cup almond milk (or coconut milk)
¼ cup coconut oil (melted)
3 tbsp nutritional yeast (for a cheesy flavor, in place of Parmesan)
1 cup spinach, roughly chopped
½ red capsicum (bell pepper), finely diced
¼ cup chives, finely diced
4 tbsp hemp seeds (instead of Parmesan for extra protein and crunch)
½ cup coconut flour
3 tbsp almond flour
1 tsp baking powder
Salt, pepper, chili, and garlic (to taste)
Instructions:
Preheat the oven to 180°C (350°F).
Blend Wet Ingredients:In a blender, add the eggs, egg whites, almond milk (or coconut milk), and melted coconut oil. Blend until smooth.
Add Dry Ingredients:Add the coconut flour, almond flour, baking powder, nutritional yeast, salt, pepper, garlic, and chili powder to the blender. Blend again until fully combined.
Add Veggies:Pour the mixture into a bowl, then fold in the chopped spinach, diced capsicum, chives, and hemp seeds.
Divide & Fill Muffin Molds:Divide the batter evenly between 8 muffin molds, filling each about ¾ full.
Top with Extra Hemp Seeds:
Sprinkle a few extra hemp seeds on top of each muffin for added texture and nutrition.
Bake:Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Cool and Store:Let the muffins cool before removing them from the molds. Store in the fridge for up to one week.
